Composed and expressive with deep colour and flavours reminiscent of an age gone by.
Deep Crimson, composed and expressive with black currant, Cabernet aroma’s intermingled with sweet plum, thyme and sweet cedar oak.
The palate is perfectly weighted with elegant tannins, bright red and black currant fruit, holding in typical Coonawarra style and length.
Picked in late March, the individual parcels of Cabernet Sauvignon, Cabernet Franc and Merlot were fermented separately in small vessels, pumped over twice daily for enhanced extraction of flavours. Once fermented to dryness, they were transferred to a selection of French and American oak, with 30% new oak included. Each parcel was matured for approximately 18 months, before barrels were individually selected for the final wine.
