‘Draco’ Single Vineyard Cabernet Sauvignon 2015


One of the largest constellations in the northern sky, Draco means “the dragon” in Latin. Draco represents Ladon, the dragon that guarded the gardens of the Hesperides in Greek mythology.

Dense and Intense in colour,  a cascade of dark fruits and complex flavours including blackberry, cassis and soft cedar and chocolate provide a very attractive and compelling nose. The palate shows outstanding concentration and density with sweet blackcurrant, violet and plush velvety tannins supporting mid pallet and finish. Perfect balance set only to improve for 20 years+.

Hand-picked from the low-yield vineyard ensured only the highest quality bunches were selected for this wine. After destemming, the parcel was fermented in a small stainless steel open fermenter, with daily plunging and pump-overs allowing maximum extraction of colour and flavour. Before reaching dryness, the wine was transferred to a selection of the finest French oak barrels of both small (225L) and medium (300l) sizing. Maturing for 24 months, only a small selection of barrels were selected for the final blend. The final wine featured approximately 50% new oak.
